INGREDIENTS

* 3 pounds boneless beef chuck roast - cut into 1 inch cubes
* 2 tablespoons olive oil
* 3 cloves garlic, minced
* 3 tablespoons chili powder

* 3 tablespoons all-purpose flour
* 1 tablespoon dried oregano
* 2 (14 ounce) cans beef broth, divided
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper

DIRECTIONS

1. Heat the oil in a large skillet over medium high heat. Saute the beef cubes in the oil for 2 minutes. Reduce heat to medium and stir in the garlic.
2. In a small bowl, combine the chili powder, cumin and flour. Sprinkle over the meat and stir until evenly coated. Crumble the oregano over the meat and pour in 1 1/2 cans of the broth.
3. Add the salt and ground black pepper, stir together well, bring to a boil, reduce heat to low and let simmer, partially covered for about 90 minutes. Pour in remaining broth and simmer 30 minutes more, until meat begins to fall apart. Cool, cover and refrigerate to allow the flavors to blend.

INGREDIENTS

* 2 pounds ground beef
* 1/2 teaspoon garlic powder
* 3 tablespoons chili powder
* 2 teaspoons ground cumin
* 3 tablespoons all-purpose flour
* 1 tablespoon dried oregano
* 2 (14 ounce) cans beef broth
* 1 teaspoon salt
* 1/4 teaspoon black pepper
* 3 (15.5 ounce) cans pinto beans, drained

DIRECTIONS

1. In a stockpot over medium heat, brown the ground beef until no longer pink. Drain off grease, reserving 2 tablespoons to remain in the pan. In a small bowl, stir together the garlic powder, chili powder, cumin, and flour. Sprinkle the mixture over the meat, and stir until the meat is evenly coated.
2. Stir the oregano into the meat mixture, then pour in the 2 cans of beef broth. Season with salt and pepper. Bring to a boil, then add the cans of beans. If you like your chili soupy, add only 2 cans of beans, but if you like thick chili, use all three. Reduce heat to low, and simmer for 30 minutes to blend flavors.

Texas Cowboy Stew

INGREDIENTS

* 2 pounds ground beef
* 2 (16 ounce) packages kielbasa sausage, sliced into 1/2 inch pieces
* 2 cloves garlic, chopped
* 1 onion, chopped
* 2 (14.5 ounce) cans peeled and diced tomatoes, drained
* 4 medium baking potatoes, peeled and diced
* 2 (15 ounce) cans pinto beans, with liquid
* 2 (15.2 ounce) cans whole kernel corn, with liquid
* 1 (14.5 ounce) can diced tomatoes with green chile peppers, with liquid
* 1 (10 ounce) package frozen mixed vegetables
* 4 cups water
* 2 teaspoons ground cumin
* 2 teaspoons chili powder
* salt and pepper to taste

DIRECTIONS

1. Crumble the ground beef into a large skillet over medium-high heat. Add the sausage, garlic and onion; cook and stir until the meat is no longer pink. Drain off grease, and transfer the contents of the skillet to a large pot.
2. Pour the tomatoes into the pot with the meat, and stir in the potatoes, pinto beans, corn, diced tomatoes with chilies, mixed vegetables and water. Season with cumin, chili powder, salt and pepper. Cover, and simmer over medium-low heat for at least 1 hour. Stir occasionally. The longer this stew cooks, the better it gets.

West Texas-Style Buffalo Chili

INGREDIENTS

* 1 (8 ounce) package dry black beans
* 1 (8 ounce) package dry kidney beans
* 1 tablespoon chili powder
* 1/2 teaspoon crushed red pepper flakes
* salt and pepper to taste
* 1 jalapeno pepper, seeded and minced
* 2 tablespoons vegetable oil
* 1 large sweet onion, chopped
* 2 green bell peppers, chopped
* 2 zucchini, diced
* 3 (10 ounce) cans diced tomatoes with green chile peppers
* 1 (10 ounce) can tomato sauce
* 1/2 (16 ounce) jar hot chunky salsa
* 2 tablespoons chili sauce
* 2 pounds ground buffalo

DIRECTIONS

1. Soak beans in water overnight. Drain and rinse.
2. In a large pot, combine beans with water to cover. Bring to a boil, reduce heat, and simmer 1 to 2 hours, until tender. Once the beans have absorbed most of the water, and are starting to soften, season with chile powder, red pepper flakes, jalapeno, salt and pepper. Reserve the seeds.
3. Heat oil in a large heavy skillet over medium low heat. Saute the onion and bell peppers for 3 minutes. Stir in diced zucchini, diced tomatoes, tomato sauce and salsa. Season with jalapeno seeds and chili sauce, stir well, and leave on medium-low heat.
4. Place ground buffalo meat in a large, deep skillet. Cook over medium high heat until evenly brown. Drain excess fat. Stir buffalo and vegetable mixture into beans. Continue to simmer for 1 hour.

for 1 minute. Add all to crock pot. Drain beef and beans before
adding to pot. Let simmer on low for 6 hours or on high for 2 hours.

How to Make Vanilla Fudge

Lovely, creamy fudge with a smooth vanilla taste. For the first time my fudge actually turned out! This is the fifth time I’ve tried, I think, and while the previous attempts tasted perfectly lovely they never really set, even when I used the thermometer and cooked to the specified temp.

Ingredients
2 cups sugar
2/3 cup evaporated milk
1/3 cup milk
1/8 teaspoon salt
1/4 cup butter
1 tablespoon vanilla
walnut pieces (optional)

Directions
1. Butter sides of heavy 2 quart saucepan.
2. In saucepan combine sugar, milks, and salt.
3. Cook and stir over med.hi. to boiling.
4. Clip on candy thermometer and cook and stir over med.
5. low heat to 238*, soft ball stage.
6. Remove fron heat, add butter and vanilla, DO NOT STIR.
7. Cool to 110F degrees.
8. Remove thermometer.
9. Beat with wooden spoon till fudge becomes thick and starts to lose it’s gloss.
10. Pour into a buttered 8 inch pan.
11. Score into squares.
12. If desired top each square with with a piece of nut.

Easy Classic Frozen Margaritas

INGREDIENTS

1 (6 ounce) can frozen limeade concentrate
6 fluid ounces tequila
2 fluid ounces triple sec

DIRECTIONS

1. Fill blender with crushed ice. Pour in limeade concentrate, tequila and triple sec. Blend until smooth. Pour into glasses and serve.

Margaritas on the Rocks

INGREDIENTS

2 cups sweet and sour mix
1 cup triple sec
1 1/2 cups gold tequila
1/3 cup brandy-based orange liqueur (Grand Marnier®)
2 limes, quartered

DIRECTIONS

1. Salt the rims of 8 glasses. To do so, pour salt onto a small plate, rub the rims of the glasses with lime, and press them into the salt. Fill the glasses with ice.
2. In a blender, combine sweet and sour mix, triple sec, tequila and Grand Marnier. Blend until smooth. Pour into glasses, squeeze a quarter lime into each glass, and serve.

INGREDIENTS

6 fluid ounces tequila
2 fluid ounces triple sec
8 ounces frozen sliced strawberries in syrup

DIRECTIONS

1. Fill a blender with ice and crush. Pour in the tequila and triple sec. Add the strawberries and limeade. Blend for 30 seconds or until smooth. Serve in margarita glasses with the rims dipped in powdered sugar.

Beer Margaritas

INGREDIENTS

1 (12 fluid ounce) can frozen limeade concentrate
12 fluid ounces tequila
12 fluid ounces water
12 fluid ounces beer
ice
1 lime, cut into wedges

DIRECTIONS

Pour limeade, tequila, water, and beer into a large pitcher. Stir until well-blended, and limeade has melted. Add plenty of ice, and garnish with lime wedges. Adjust with additional water, if needed.

The first method involves making a brass cleaning solution at home. This is simple as easy. You need lemon juice and basking soda to complete the mixture. In a small bowl mix the two ingredients using a small about of lemon juice to develop a paste. This is what you will use as a polish. Next get a micro fiber or soft towel rub the paste into the brass. When your finished wipe the item off with a clean towel and you should see a much nicer surface.

The second method involves using an off-the-shelf product. Go to you local auto parts store and pick up Mothers Metal Polish. I got the best result using the Mothers Billet Polish in the can but any will do. If you have a large item, try using the Mothers buff ball. This product works fantastically and you really will not believe the difference.

Mothers polish is used exactly the same as the first method. You rub the polish onto the brass with a soft towel and then wipe try. It’s very simple. You’ll see the towel start to turn black. The black residue is all of the dirt and oxidation from the brass. Do not worry about damaging the brass with this polish, the brass density is strong.

Repeat either of these two methods for enhanced results.
